Our Story & Philosophy

Born from reverence for the flame and the flour

Koraven Thessique Ltd was conceived as an intimate tribute to the classic pizzerias of Southern Italy, shaped through the warmth, comfort, and gracious hospitality of contemporary Britain. We set out not to reinvent pizza, but to strip away the shortcut methods that modern dining so often tolerates.

Every pizza begins with an unhurried, multi-day dough fermentation cycle that produces an airy, blistered cornicione that is remarkably light to digest. By keeping our preparations deliberate and our dining room unpretentious, we welcome families, colleagues, and solitary diners into an atmosphere defined by genuine care and culinary honesty.

The Three Pillars of Our Kitchen

Equilibrium of Heat Intense deck temperatures that blister the rim in ninety seconds while retaining tender interior crumb structure.
Restraint in Adornment Never overloading the base. Three to four harmonious elements ensure the dough remains the quiet hero.
Gracious British Service Attentive, relaxed hospitality designed to make every visit feel like an unhurried Sunday afternoon at home.

Handcrafted Daily

Fine Italian milled flour, spring water, sea salt, and wild yeast culture shaped by hand each morning in Salford.

Honest earth, fresh herbs, and the steady discipline of the stone hearth.

03 / Provenance Our Kitchen Craft

Great pizza allows nowhere for sub-standard produce to hide. Because our crust is thin and our toppings are kept balanced, the sweetness of freshly milled tomatoes, the milky acidity of Fior di Latte mozzarella, and the grassy puncture of torn basil must perform together in total clarity.

Inside our kitchen, process is treated with quiet reverence. Dough is mixed in temperature-controlled batches and rested through extended cold fermentation. It is opened strictly by hand—never rolled with mechanical pins—preserving the delicate gas pockets that inflate under the intense radiance of our high-temperature oven.

Sauce Base

Crushed gently by hand with pure sea salt to preserve natural bright acidity and rich sun-ripened sweetness without added sugar.

Fior di Latte

Creamy Melt

Traditional cow's milk mozzarella carefully drained overnight to prevent excess moisture from softening the crisp crust.

Sweet Basil

Aromatic Finish

Torn fresh just before entering the hearth or sprinkled post-bake to release its peppery, fragrant essential oils.

Italian Flour

Crust Structure

Finely milled wheat flour offering the ideal protein balance for elasticity, chew, and a featherweight honeycomb crumb.

Cold pressed extra virgin olive oil drizzle over freshly prepared ingredients

Extra Virgin Oil

Gold Drizzle

Cold-extracted olive oil with a gently grassy, peppery profile applied as a spiral finish to enhance crust flavour.

Wild Herbs

Savoury Notes

Dried Mediterranean oregano and fresh rosemary that blossom in the oven's ambient heat without burning.

Baking at 450°C

Under intense thermal conduction and convection, the moisture within the dough expands instantly, caramelising natural sugars into a mottled leopard-spotted rim.

Our Guiding Standard

Five commitments that shape every bake

We hold ourselves to five core principles that define how we source, prepare, bake, and welcome our guests every day.

01

Quality

We never substitute inferior alternatives or speed up fermentation. Every component is chosen for purity, texture, and flavour integrity.

02

Craftsmanship

Pizza-making is manual art. From feeling the dough hydration in changing weather to timing the oven peel, our team is rigorously trained.

03

Freshness

Toppings are sliced, prepped, and measured each morning. Sauces are freshly mixed without artificial preservatives or shelf stabilisers.

04

Hospitality

Warm, attentive British dining where every guest is received with respect, timely care, and an unhurried, comfortable atmosphere.

05

Consistency

Whether dining on a busy Friday evening or a quiet Tuesday afternoon, your crust will arrive blistered, crisp, and fragrant every time.
